A Delicious Vegetarian Recipe
The majority of my clients are busy professionals who not only want to optimize their health and wellness but are also interested in easy solutions to fit their active lifestyles. I found a simple and delicious recipe that is prefect for a Sunday Brunch or even for lunch using The Veggie Patch Spinach Bites. Enjoy!
Ingredients:
- 3/4 cup shredded low-fat cheddar or Colby cheese, divided
- 1/3 cup liquid egg whites (3 large egg whites)
- 3 large eggs
- 1/4 cup low fat milk
- 1 package Veggie Patch Spinach Bites
- Salt and pepper to taste
Instructions:
- Preheat oven to 375 degrees and grease or spray a 9 to 12 inch pie pan.
- Place bites on bottom of pie plate and bake for 13 minutes.
- Meanwhile, in a mixing bowl, whisk the eggs, egg whites, milk and 1/4 cup of the cheese.
- Remove Spinach Bites from oven and pour mixture over the top of them, then top with the remaining cheese. Bake for 35 to 40 minutes until eggs are set and cheese is lightly browned and bubbly. Let stand five minutes, then cut into wedges and serve.
