BLACK BEAN QUINOA SALAD


This is a heart healthy, high fiber, big on taste vegetarian & gluten free salad. It actually works as a meal because it is the perfect combination of protein, carbohydrate, and fat.  This is a great dish as you can keep it in your refrigerator and freshen up with lemon each time you are ready to serve it.

INGREDIENTS:

  • Quinoa- 1.5  cups cooked
  • 1 can of black beans
  • 1 Persian Cucumber
  • Grape tomatoes
  • Green onions
  • Yellow Pepper (You can choose any color you want)

DIRECTIONS:

  • Cook the quinoa as indicated on the box- it takes about 12 minutes- allow to cool slightly
  • Rinse and Drain the Black Beans (you can also try this recipe with chickpeas)
  • Cut up your veggies to the desired size (you can use any vegetable you would like)
  • Dress with a splash of olive oil, lemon juice, ground sea salt and ground black pepper to taste
Remember, you get the heart healthy benefits of olive oil when it is used fresh in salads vs. when you cook with it.

SERVING SIZE:

  • 1.5 cups
  • (YIELD 4 cups)
